Fajita Quesadillas

Thanks to everyone for the suggestions yesterday on how to prepare skirt steak. Picked up some Jardine's fajita marinade (I'll make my own next time - but this was pretty good). Sorry, no pics on the egg- the cook went very fast and I just didn't have myself as organized as I would have liked. But the quesadillas were quite easy to prepare, and they were pretty darned good! Have enough for leftovers tomorrow night - will serve with rice and veggies. Life is good. :laugh:
