Turkey breasts

Had a couple of turkey breasts tha have been sitting in the fridge for a while
Made a paste of sage, thyme garlic and curly parsley in some butter. Pulled the skin back and slathered the paste on.
Pulled the skin back over and set it with toothpicks
Put some mini reds, onions, garlic and some sage in a pan
Put the rack in with the breasts
Basted with butter and cooked til 155*
Squashed the potatoes with parsley and served

Looks good, just kidding, boss. We haven't done turkey in a while, but turkey breasts are a favorite around here. Need to try it soon. Our turkey breasts are whole, with wings. The only thing missing is the legs very odd. :ermm:ed egli avea del cul fatto trombetta -Dante -

I did them with the platesetter about 325@. I put the platesetter in cold so they took about an hour. If I had remembered to put the platesetter in first I would guess 45 minutes or less.
