Did smoke salmon for Christmas morning, and it was a big hit--had a request for a repeat on Easter. The brine started Friday night:
Dried for a few hours on Saturday:
On for 6 hours Saturday evening at 180, indirect:

Its the one I found on "Russel's Smoked Salmon Tutorial" on The Naked Whiz' website. Pretty simple: soy, white wine and water based, with garlic, onion, pepper and Tabasco for spice.
