First - here's a shout out to all of the Egger's that attended the rib class at Dead End BBQ in Knoxville yesterday, there was a bunch of us.
Here's a recipe that I first had at Kingsford University in March. It was awesome then so I made it to go with some steaks last night. Oh yeah, just as good when I make it.
It's easy too. The recipe can be found here at grilling.com but it's basically....
Corn grilled 8 minutes at 450f direct.
Brushed with a mixture of yogurt, mayo, and lime juice.
And sprinkled with a spicy cheese mixture of cotija, chili powder, cayenne, cumin, and salt.
These disappeared fast! These are a great side dish for tex-mex dishes or by themselves as a snack.
