Porterhouse and new knife

Picked up a Porterhouse today from my meat guy. I was bragging about my new knife. He opened up a drawer and gave me one of his. He has a commercial butcher room (That's what I call it). Hands me this knife and tells me to give it a try. He uses them all the time and said to bring it back when it needs the professional sharpening job. It is a Victorinox flexable. Don't think they are expepensive, but razor sharp.

I have a few of them and they are great and hold a great edge. Got them from a butcher also a few years ago.

I couldn't tell him mine was better when he cuts more meat in on minute, than I do in a lifetime. Plus the free sharpening for any of my knives is a good deal.

Hey Al, I have never used one but I know people swear by them, and you are right, they are not real pricey, $20-$30, I think
