Smoking fish....wood chips?
Kill it then Grill it

What wood chips seem to pair well with certain fish. Adler, cherry, mesquite, hickory,.. I'm trying to smoke a whole trout tonight not really sure what kind of wood to use.

I'd go with something light, like cherry or apple. Haven't used alder, but think it might work.

Based on thirdeye's recommendations and your stock of chips, I would start with the alder and finish with the cherry. His expertise and knowledge are highly respected here.

I'd use a fruitwood, but whatever you do, don't use mesquite. Way to strong for fish (in my opinion).

Thanks for the kind words. I bet that Kill it and Grill it is flavor smoking a fresh fish, instead of one that has been cured. And in which case the alder would still work, but an alder/apple mix is a good choice too. The logic here is time in the smoke..... when smoking a cured trout it's in the smoke for about 3 or 4 hours, starting with the mild alder gives it a good flavor, then the cherry helps with the color at the end. When you grill a fish using flavor wood it's only on the cooker for maybe 30 or 40 minutes.
