One of my favorites of the day....Misippi Egger made this incredible seared tuna on a salt block.

So I see this little tube of Wasabi and I think "Hey I like Wasabi" and I squirt a tiny amount onto my first piece. WOW!! Not sure if that tube was concentrated or what,,,

But this sauce in this little cup was incredible, left off the Wasabi this trip! Clark did you make that?

All and all a GREAT Day! The new venue, perfect! the weather, perfect! Fellow Eggers, Perfect!

George and his brothers at Grate Grills and More did a GREAT job. Nothing was overlooked!

    You might have missed the announcement about how strong the wasabi was that was in that tube - much stronger than what is served at sushi restaurants. :ohmy:

    The sauce was store-bought Ponzu Sauce. I think it was Kikkoman brand, but not sure. In aisle by the soy sauce and such.

    Y'alls crawfish pizza was AGAIN, to die for! And your little waitress/server did a super job - she was so cute in that hat! :woohoo:

    Were you the ones that made the awesome crawfish pizza at the Gulf Coast Eggfest? That was AWESOME and one of my favorites! I'd love to get the recipe. I'm a new Egghead since purchasing one of the demo eggs Saturday. I put it to use Sunday afternoon and I can't wait to try some of the great recipes.

    i really hate i missed this, but i couldn't get the baby to cooperate enough to try to venture out with him and my big guy sans mommy.

    i've really enjoyed looking at all the pictures you guys posted. had i made it there, i'd have had a blast.

    food all looked delicious.

    Here is the recipe. Good to meet you on Saturday and I hope you enjoy your Egg as much as our family does!

    For the Crust:
    Ingredients
    3 tablespoons
    3 envelopes (3/4 ounce) active dry yeast
    2 teaspoons sugar
    2 cups warm water (about 110 degrees F.)
    5 1/2 cups bread flour (or more as needed)
    3 teaspoons fine salt
    1 tablespoon chopped fresh rosemary
    1 tablespoon chopped fresh sage
    1 teaspoon kosher salt
    Instructions
    Lightly oil a large bowl with 1 teaspoon of the oil and set aside.
    In the bowl of an electric mixer fitted with the paddle attachment, combine the yeast,
    sugar, water, and 2
    tablespoons of the oil, stir and let sit until foamy, about 5 minutes. Add the flour and the
    fine salt, and mix on
    low speed until the dough comes together and forms a ball, 2 to 3 minutes. Increase the
    speed to medium an
    mix for 8 minutes. If the dough is still sticky, continue mixing and gradually add the
    remaining 1/4 cup flour.
    Form into a ball and place in the prepared bowl. Cover with plastic wrap or a kitchen
    towel, and let rest in a
    warm, draft-free place until doubled in size, 1 to 1 1/2 hours.

    Roll out dough, we usually pre-bake the crusts for about 10 min just so the dough doesn’t burn while letting the cheese melt.

    Crawfish Pizza Sauce:
    ½ Cup of butter
    1 Pound of crawfish tails
    ½ tsp of cayenne pepper
    2 shallots chopped
    2 Pints heavy whipping cream
    1 tsp of white pepper
    1 tsp of paprika
    Garlic powder to taste
    1 bunch of finely chopped green onions
    Sauté shallots and seasonings with butter, add whipping cream
    cook for 10 to 15 minutes.

    Spread a layer of sauce down on the pizza crust, sprinkle with
    mozzarella cheese, finely chopped green onions, crawfish tails
    and Egg till golden brown and cheese is bubbling.

    KAHLUA COFFEE BROWNIES


    Waiting in line for Pete & Judy's Kahlua brownies
    This recipe was made by Pete and Judy Wilson of Biloxi at Eggfest 2010. They had people waiting in line to try this great dessert.

    Difficulty: Medium

    Prep Time: 30 Minutes

    Cook time: 20 Minutes

    Equipment:
    • 13 Inch Glass baking Dish
    • Plate Setter "Legs" Down
    • Pre Heat Egg to 350 Degrees

    Ingredients:
    • 1 Cup unsalted Butter
    • 1 Tablespoon Instant Coffee
    • 4 Ounces Unsweetened Chocolate
    • 4 Large Eggs
    • 2 Cups Granulated Sugar
    • 1 1/2 Cups All Purpose Flour
    • 1/8 Teaspoon Salt
    • 1 Cup Bittersweet Chocolate Chips
    • 1 Cup White Chocolate Chips
    Directions:
    MAKE SURE YOU HAVE FRESH, CLEAN CHARCOAL IN YOUR EGG!!!
    • Melt butter in saucepan over low heat
    • Add coffee and stir until dissolved
    • Remove saucepan pan from heat and add the unsweetened chocolate and stir until dissolved and smooth
    • Add eggs one at a time and continue mixing
    • Add the sugar and mix well
    • Add the flour and salt and gently combine
    • Using a spatula, fold the bittersweet and white chocolate into the batter.
    • Spread the batter into the baking dish.
    • Place the baking dish on the Plate Setter Close the lid and bake for 20 minutes, or until an inserted toothpick comes out clean

    Kahlua Icing:

    Ingredients:
    • 1 8oz Package Cream Cheese at Room Temperature
    • 4 Tablespoons Unsalted Butter
    • 2 Tablespoon Kahlua
    • 2 1/2 Cups Confectioners Sugar

    Directions:
    • Beat the cream cheese and butter in a large bowl with an electric mixer
    • Add the Kahlua and confectioners sugar and mix for 2 minutes
    • Using a spatula spread the icing evenly on the brownies

    Fantastic!

    Mine runs April 30th in a large local 1/2 marathon. It will be her 4th half this year - one a month. We will do our first Relay Triathlon in late May (friend swims, wife runs and I will bike) - a Memphis in May event. Should be fun!
