Pork Satay & Lemongrass w/Peanut Sauce (Yo! Rip!)

Spurred from a conversation with Ripnem, I had to try a recipe that I found in a book. Kind of a 'test run', so to speak...So here we go!!
Ground Pork Satay, with Spicy Peanut dipping sauce...
Started...
Turn lemongrass stalks into skewers....
Then...
Wrap the ground pork, heavy in Thai flavors (garlic, red curry paste, fish sauce, cilantro, etc), around the lemongrass skewers....
To the Egg!
Getting happy....
Really happy...
Just about done now!!! Ready for the pull and rest!
While the pork rested...
Bok Choy...Split, a drizzle of Olive Oil, S&P, and onto the grill.
Bok Choy, after a high heat fast grill, and drizzle of Soy Sauce!
Plated...
With a spicy peanut sauce for dipping the pork, the grilled Bok Choy, and the rice was actually flavored with lemongrass and Kaffir lime... Can't tell you how nice it is to have a Kaffir Lime in the yard!!
Close...
Wonderful meal! And yes, I cheated (after yesterdays Pupusas, I deserved a cheat...lol! California rolls courtesy of Publix.)
An awesome meal! Easy to do, and will do it again! (ps...grilled Bok Choy is awesome!!!)

I hadn't thought of ground pork for something like that.
I do a Thai Pork on a Stick, but I cut loin.

JB...The ground pork was a bit strange to work with. You will notice a difference in consistency between ground beef and ground pork, (pork is looser!) but this really was a nice change! Flavors were awesome...and truly, the lemongrass skewers added SO much flavor! Thanks for your feedback!

M&M PH...You won't find lemongrass stalks in Publix...Well, at least I never have in the Tampa/St Pete area, and Miami area. I have to find a really good Asian Market for the lemongrass!! (Usually find my best pork belly in the same market! Post to come tomorrow!!) I have lemongrass growing, but it's not ready for harvest. I drive about 10 miles to get where I know I can get it, and it is worth every CENT of my drive! Truly, amazing stuff!! Wish you the best in your pursuit!

Hope my Lemongrass buds again this year, but seeing the hit the rosemary took from the deep freeze....have some Kaffir lime leaves in the freezer -- will try this very soon, too, along with LS's meat on a stick.

im hungry, great cook, might even try the bok choy. very jealous of the kieffer tree, try to find one every year to try growing in a pot, seems everyplace is out when i do but i think this is the month to lookfukahwee maineyou can lead a fish to water but you can not make him drink it

Dangit, I just saw baby bok choy at the farmer's market today, and didn't buy it!
I have to drive 18 miles to get lemongrass.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Wow Michelle, that looks great! Having gone to high school in Bangkok I love to try anything with those flavors. I'm even thinking about planing lemon grass as an ornamental grass somewhere in the yard.

Great little book.
I also found it posted online by a blogger, ingredient per ingredient, which infuriates me to no end. Plus the fact the blogger changed amounts of ingredients just enough to make the recipe not work. I am not fond of folks that don't give credit for a recipe.
I recommend the book. And, her recipes actually work as written. Have fun! -
Big Daddy: If you need Lemongrass seeds, let me know! Have had a lemongrass plant in one yard or another for about 10 years now, each on started from seeds from the prior. Awesome ornamental, and always fantastic to go out and pick a few stalks! What part of the country are you in? They get about 7 feet tall down here. :laugh:

JB: Don't think it would survive through your winters. :S Still awaiting word from Georgia if it survived the winter there!! If you have any Asian populous at all, you should be able to find it in their markets. It lasts a long time wrapped properly in the fridge.

Re: the blog you found. I too, really dislike when credit isn't given. Thus my request (about a year ago now) from you to do your Pork Roulade on the Lakeland Cooks show / fund raiser for the local PBS station.
I do other folks stuff all the time, but I really make a point to give credit, where credit is due! Even if it's just inspiration!!
It's just the right thing to do.... -
Now that I think about it... :ermm:
Seems we have a native Lemongrass (that the natives, as in American Indians) harvest around here. However, it looks nothing like what you have posted in the pics.
I'm going to have to do a bit of checking on this one.
Regarding a population and a market....For sure, but it is in the Twin Cities, about 200 miles south of me. -

There were no "winners" just cooks that were selected / asked / invited to come "on air" and do a segment of the show. Guess, that make me a winner, in a sense .
I've done it a few times now and always have had a blast. It is basically a donation of my time to entertain and share some cooking....And fund rase too.
And, again I thank you for being able this.
