Cheese stuffed meatballs

I know that it's been a while since I last posted a cook,but I've been busy trying to keep my head above water :pinch: Anyway,I received a free sample from The Rub Co,so I decided to try it out on some cheap meat first :P I used ground chuck,stuffed with mozzarella cheese.Then I rubbed them with Santa Maria style rub.They were a pretty good snack for me and Carson this afternoon :woohoo: These were cooked on the mini at about 300* with some apple wood.I know that the pics aren't great,but my dslr is on the fritz,so I'm stuck with my little point and shoot :pinch:

doug, they look great.... was the cheese in block form or shredded form.... have to try that.... simple but looks mighty tasty

How long did you leave those on? Those are some large balls as have already been referenced.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Hey Scott,I left those "large balls" on there just long enough to get to 160* internal temp.Maybe an hour(3 beers)or so :laugh:

Now those are what I call meatballs!!
Last month some of my buddies made sausage that had high temperature cheese in it. It was my first home made sausage with this cheese and I am really hooked. During the first sample we all realized how neat this stuff would be in meat balls, meatloaf or just in hamburgers. Here is what it looks like, it gets really soft, but not runny. (oh, the green stuff in there are roasted green chiles)
