Head cheese! Actually try and find some mexican cheese, queso fresco. Very good on fajitas or enchiladas.

Cotija gets my vote for fajitas, carnitas and the like mexican concoctions.....unless you're talking about Memphis Style BBQ Pulled Pork nachos....then it's "Scary Cheeze" as my daughter calls it!

Hey, I SAID it was wrong! But I was just reading a bit about Philly cheesesteaks and subbing butt for steak with some onions and cheese on a nice hard roll actually doesn't sound bad.
C'mon, Michelle - admit it! It's not sweet-Italian-sausage-with-peppers-and-onions-on-a-hard-roll-outside-of-Fenway... but it doesn't sound bad! hahahaI hate it when I go to the kitchen for food and all I find are ingredients!

I make BBQ nachos with pulled pork all the time. I just use spicy nacho cheese.

I made some brisket tacos once and used chihuahua (no, not the dog) and it worked pretty good, if you can find it where your at.
