Just felt like a Pork Butt!

Nice sunny day in Florida. Seemed like throwing a couple of pork butts on the egg tonight was the right thing to do. Added a wonderful rub from Dr. BBQ's book. Loaded the egg with fresh lump. Added some hickory, apple and cherry wood for flavor. Connected the BBQ Guru ProCom4 and ready to wait until tomorrow sometime to pull the butts and spread the joy around the neighborhood. I actually get phone calls for the neighbors asking if I am cooking butt!

  • I have found if you are cooking a little higher temp that the neighbours can smell it, it is a little to high. I been holding a temp of 235 in an XL. What temp are you running to fet that aroma out of the egg.

    When I hold 235 I believe I get a very nice bark and a real tender result. When I am above 250, it smells like it is roasting more than slow cooking...well more like 275. Let me know how your temp and result works out.
