Suggest you cook food. :woohoo:

That I will!!
Nothing else lets me gain weight. -
I would suggest something with meat, perhaps a potato and a green as well.
In all seriousness, just depends on how comfortable you are on the egg. I cooked on my buddies all the time before I got mine. First cook was burgers and brats, second tackled a brisket, but I had probably over 50 cooks behind me on my buddies egg.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season. -
That's very helpful, Rich!! :woohoo: Been missin' ya'll out there in CA! Those great beans you gave me are long gone. Thank you again, my friend for those fantastic Santa Maria beans........
-
Brisket is my all time favorite. Maybe I will see what I can do with it and some of the great suggestions here.
-
Wally, I did my 2nd ever Egg brisket this past weekend and it actually came out better than the first one. Both fell into that class of undeniable success often referred to as "KILLER." If I can do it, anybody can do it. I finished the last of it tonight.....and I'm just thinking I might do another next weekend!!

Chicken is always an easy thing to cook. The temps. you'll want (about 350*) are very easy to maintain/stabilize on the egg. This'll give you a good feel for how to do the temperature thing. One bit of advice.......when the recipe or whatever you're going by (that could also mean experience) calls for a specific temp., don't get all hung up on adjusting the settings on the egg to zero in on the "exact" temperature. Anything within 25 degrees or so will work great in most cases.
-
Well, I am going to give it a try along with some sides and never cook outside without some sausage to chomp on while waiting. I guess I can really eat a lot aiting on a brisket!
-
Good point, podner......

Chicken may be the thing to do

Plank grilled salmon is outstanding and a short cook. Did my first last Friday night. My wife and daughters think I'm a culinary genius!! I'm here to tell you I ain't NO kind'a genius!!
-
First important lesson I learned was not to chase the temp and accept temperatures within 25* up or down. Also that most temps posted are dome temps. I love my 732 wireless and thermapen.
My first cooks:
Chicken Breasts, Cedar plank Salmon, Brisket, Pork Tenderloin, t-bone, pizza (fried the gasket and replaced with nomex), Pork shoulder, etc.
About 3 months into this and eggdicted!
Have fun and post pics!!!Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories. -
I would suggest spatchcocked chicken for a first cook.Very forgiving and inexpensive if things go awry. Brisket is great but cooking one is like playing blackjack.Takes a few minutes to learn but a lifetime to master.

I must read all I can about remote temp gauges, plate setters and other things I will have to buy along the way.
-
Get the plate setter first. The remote therms can come later. Worked without the remote for a while before getting one and, while it is a very nice convenience, you can get by for a while without one if you have to.

Here is a recent debate about must have eggcessories:

I use the placesetter for indirect, the pizza stone for pizza, a raised grid - for raising the grid and love the remote 732, just to keep track of temps.Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories. -
SOUNDS LIKE MY LINEUP, EXCEPT THAT I HAVE NOT GOTTEN INTO PIZZA YET.
-
Have fun and I'll see you there. Not cooking myself this year as I've not had my egg very long but I've got a couple of ideas for next year.
-
That would do!
-
I am just looking forward to meeting a lot of eggers and tasting a lot of good food
-
Sounds like a blast. I'm the only one from Ocean Springs to sign up so far. Strange since we have our own Green Egg dealer over here.
-
"YET!" Is the key word here! If you want pizza night to be a high school kid ringing your doorbell with a box of goo, don't ever try pizza on the Egg!! You'll be spoiled for life!!

Gulfcoastguy: Team up with an experienced Egghead at the Meet & Greet, and then cook a bit at the fest!! It will be the best experience of your life! Just don't plan TOO much...you want time to socialize. But seriously, pair up with an experienced egghead, even if you just assist them, and you will learn a TON in a day!! You'll walk away from the weekend with a whole new group of close friends, honestly. Eggheads are an amazing group of folks!

I am trying to gert a couple of more couples to come from Mobile. The more the merrier

I wonder if people have been in touch with the press to advertise the Fest. The morning guy on 104.9 is a real foody and would probably love to give some free publicity especially if he say got a free press pass. Just an idea.
