Thick cut pork chop!

Went to our local gourmet grocery on Saturday and picked up some goodies. They have a fabulous meat department. Got a thick cut, bone in pork loin chop. Also got some great looking braut's, but that is another cook.
Put it in a brine of salt, sugar, crushed peppercorns, garlic, rosemary & sage for about 2 hours.
Took it out of the brine, rinsed it and patted dry. Sprinkled with Tsunami Spin.
On the egg at 400.
Glazed with a mixture of bbq sauce and green chili marmalade, heated on the stove.
Pulled at 140 and let it rest.
Plated with a baked sweet potato and green beans. This chop was outstanding! So big we split it.
Bella & I were yelling for Tony Stewart to get the win today, even with her Tony bling, he couldn't pull it off.

Not raw at all. That was just where the pork was a darker shade of red, near the bone. We are both still standing today!

All I can say is I'm taking off work Monday after the fest as well to recover.

Yeah we fly out to Cozumel Sunday morning to recover this year. Might have to take it a little easier this year but if we manage to pull off the win again you just know that ain't gonna happen...

Once we pay to get all the way to OKC it's (relatively) cheap to travel on. Paying for that flight for only 3 days is a little crazy. Last year we went to San Fran afterwards.
