full trimming is for presentation and I'm all about the eating so at the 4 hour mark I trimmed a little snack
6 hours sauced with my favorite,, Big'un's carnivore sauce

Great looking spare rib slab. I never cooked them whole before. Can't see anything wrong with the way you did it. I'd come over and eat it. :evil:
