hi all, i want to do wings for the UFC fights tonight and just wondered roughly how long it should take to cook them at 350 or so...thanks in advance!

direct on a raised grid at 350 they'll go about 50 minutes to an hour.

Indirect then more like 1:15 to 1:30.

I plan on doing wings tomorrow also. I was going to try Fidel's method. Time will tell. They look great!

My best friend lives in Hudsonville, about an hour from me. I have had good luck with the lump from Walmart. The brand is Royal Oak in an orange bag. Price is $6:37. They just started carrying it again for the summer. Sorry I can not help more.

QUICK - stick the wings on a tray and put them in the fridge to help dry the skin out....any time is good, but the longer (overnight) the better. Helps it crisp up.

If you do the vinegar blanch then the drying isn't necessary. The blanching will render some of the fat from under the skin and tightens it up a bit before you put it on the grill.

Put the wings in a sacuepot, cover with cider vinegar and heat until 140-150* or so. If anything cut it short instead of too long or they'll start to fall apart on you.

Drain well, season, finish on the egg.
