First rib experience on the egg

I made my first 3 racks of ribs on the egg today. Cooked right around 215 for two hours.
Things I learned.
I put them on at about 350 and mellowed the grill right down to 225, the temp dropped to about 150, I brought it up to around 200 for MOST of the time. Next time, I'll wait until the grill temp drops to 225.
I used a brown sugar based home made rub, I think the charred a bit, even though it was indirect heat.
LASTLY... while warming up my egg and getting the bad smoke to go away, I must've gotten it too hot, cause now my gasket is burnt to a crisp! grr... not sure how that happened.
Anticipation...
Are they done yet daddy? Are they done yet?

Not sure how they tasted, but the pictures sure are brilliant!
I don't normally go below 250, and once it's stable (1hr or so), I normally dont have any big problems. -

Great pics... Gaskets? who needs them... make sure the dome is fitting correctly and keep on cooking. I'm in year 5 with no gasket - they are over rated.Kent Madison MS

I'd be surprised if the gasket failed unless you were up above 700 F, ...unless... the dome wasn't seated quite right. If there is a gap, even small, someplace around the rim, the gasket will char, and eventually burn away there. On my Eggs, if there is a seating problem, it is usually towards the back.
I haven't gone without a gasket, but have found that it is not possible to get fine temperature control if a portion of one is burnt away. I've made do by cramming in some foil where I've had gaps, till I got around to replacing the felt. -
Well I did start up the charcol and head inside to get the ribs ready. When I went back out the dome temp was up to 700(ish) and I cranked everything down... that's when I noticed the burnt gasket.
It seems to be seating fine, and even held a pretty good temp on the egg, once I got it dialed in properly. -

well they sure look great, how did you get them done in 2 hrs?!? it must have been pretty hot, for you to get them done that quick??

We normally go about 250 for 6 hours... 2 hours seems so fast to me. Slow and Low baby!

I have yet to cook them on my egg (not far off though). On my large rotisserie cooking trailer I cook them for 2.5 at 300 then wrap for a hour. They turn out fall of the bone (not competing so not worried about the bite mark).
