Gonna try salmon will be cooking on a plank how long and what temp should i cook at.

I usually cook mine at about 350. Trick with fish is to never over cook, I usually check with a fork and take off when it just start to cook in the middle - never paid that much attention to time.

soak your plank and cook on a raised grid at 375 or so. I do mine indirect, many folks go direct. You want to cook salmon to an internal temp of 138-140, or just until the white fat starts coming up out of the flesh Go to the forum heading here and scroll down to "search", type in salmon and you will get many, many posts/ideas

I cook mine to 120. Dome 350. Soak in a salt brine for an hour so you don't get that gross white albumin rising to the surface. I have been skinning them and cooking the skin under the broiler brushed with olive oil and sprinkled with salt and whatever rub.
