Is there a reason that many of the structures used to hold poultry keep the birds vertical. Many of the contraptions I have seen look like mini Eiffel Towers (is it necessary?). I smoked a turkey right after Christmas and put it on the v rack that came with the egg and it turned out ok for my first attempt. I am going to attempt a whole chicken tomorrow any tips would be appreciated.

I'd research spatchcock. It is not difficult and you have no need for any sort of stand! I love cooking whole chickens on the egg.

It is not necessary, many of those are designed to hold water like for beer can chicken. On a lot of grills, you lose moisture, and these are designed to help you retain moisture. That being said, moisture loss is not an issue when cooking on the egg.

Go spatchcocked cook direct at 375/400 and cook high in the dome. You cook skin side up and never turn over.
I leave overnight in the fridge open to do skin. I do not use oil and only put rub on 30 min's before grilling.
Like cherry wood - very light not much needed.
Takes an hour to hour twenty.
Very good bird.....
Do the same with turkey....Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -

Give this a try. It's called 'Spatchcocked' (spatchcocking) the bird. Simply cut the spine out the critter and smash it flat, then cook bone side down, up high in the dome at about 400* dome temp. Cook poultry to 165 breast meat and 185+ thigh meat. This is a 14 pound Turkey that took an hour and 40 minutes at 375* dome.

How difficult is it to get the spine out? Is there a good website with instructions/photos? I'd like to try that method.

The easiest way is to use a sharp set of kitchen shears.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
