Red Chile Pork Posole

Cold and nasty today, found some leftover PP in the freezer, so Posole it is!
First, the raws for red chile sauce

Red chile powder into a dry CI skillet, just until it smells really, really good

add water, garlic, onion, S&P and mexican oregano and reduce

Sweat the onions and then everybody into the pot

indirect at 325ish until the hominy is right and its ready

    Denver's high of -1 degree on Tuesday is the coldest maximum temperature on record for February 1.

    The old record was 2 degrees set in 1985. The ice fog around the area will clear as the night goes on.

    A Wind Chill Advisory is in effect until 9 a.m. Wednesday for wind chill equivalent temperatures of -10 to -30 degrees.

    By dawn winds will be calm in the Denver area with record cold temperatures from -23 to -18 degrees.

    Here it is, I also sent a email,
    Had it all typed up from OKC last year,
    suggestions are appreciated!
    Red Chile Sauce
    4 tblspn pure red chile powder ( new mexico)
    3 cloves garlic, minced
    ¼ tsp black pepper
    ¾ tsp salt
    ½ tsp oregano
    1 ½ cups water
    Place chile powder in a hot, dry CI skillet, roast over med heat for approx. 1 min. once the chile becomes aromatic, add water while whisking. Add remaining ingredients’, continue whisking until mixture is smooth. Cook down until sauce thickens, roughly the consistency of ketchup.

    Pulled Pork Posole
    1-2lbs smoked pulled pork
    3 cloves garlic, crushed or minced
    2 tblspns kosher salt
    2 qts water or chicken stock
    1 lg cans Mexican style hominy
    ½ cup or more red Chile sauce
    1 bay leaf
    ½ teaspn oregano
    1 lime
    ½ cup onion, chopped
    Sauté onion in oil until tender and translucent, add garlic, sauté another minute or so. Add pork,hominy, bay leaf, oregano, salt and bring to simmer. Add red chile sauce, simmer 30 minutes or so.the hominy should be slightly opened, but not mushy. Finish with lime juice and serve.

    Thanks, Rebecca, it is cold here, 31 with a 15-20 mph wind right now. we are not supposed to get any of the nasty stuff you are expecting, good luck with it, spring is on the way, I hope!! :)
