Here's some Brunch shots from this weekend with Spring Chicken and Chubby. Saturday night started at the new mobile food wagon boardwalk in San Antonio. Unfortunately, we arrived late and many were already sold out. Sunday the Chickens showed up and we brunched. Pig candy sprinkled with finely chopped pecans. Mmmmmmm. The Chick's Egg dish was a killer, but what's not to like about eggs, heavy cream and parmesan cheese. Gotta have the Tater Rounds. Stuffed until I was miserable.

Thanks Great post and pic's. In pic #6 It looks like you were using an older egg. I see what looks like a kind of daisy wheel. Is that home made or what use to come with the older eggs? :ermm:

Mike my stroke doctor wants a few words with you about the amount of bacon in that last picture :laugh:
You got to do that when you guys come to Salado. Bacon and pecans = good......Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -

Mike can give you specifics...but a search of the Archives for "Mickey T's Rings" will get you to the starting place.
They were "Rings"...(usually a set of 6 or so) that had graduated sized holes for maintaining specific temps. What Mike has there is a later version where it used one Ring...with a small sliding damper that slides across the hole and controls the airflow.
The "Rings"...and the later version Mike has there worked/work very well!!

1. Wife's department, and given a choice she'd leave them up all year. That's one of three...two are still standing.
2. That's Chubby's Chick's recipe. Don't know what all is in it, but my dogs go nuts over them.
3. Relative humidity...btw, he's easy pickin's

5. Texas is great. But, I instinctively know when I cross into New Mexico no matter where I cross. It's "Enchanting", and always has been. -
