Can I rub my chicken for 32 hours?

I'll be out of town until the cook Sunday evening. I have chicken pieces. I know I can't marinate or brine for that long. Will it turn rubbery?

Seriously, I cannot imagine why a rub would hurt raw chicken as long as it is in the fridge, although you could also wait until closer to your cook on Sunday.

What's in the marinade? It won't turn rubbery as a rule. But if it has acids in it, you will be cooking it

Otherwise I'm not sure what the issue would be

My fiance recently bought some pre-seasoned leg quarters from the local grocery. We've had them before and they were pretty good. But this time something came up and I had to wait until the next evening to cook them. They were way over seasoned and salty, clear through the meat, not just on the skin. The chicken seemed to absorb the rub. So I probably wouldn't leave it on that long. JMO!

As was said below, probably no on the rubberyness. However, I have the best luck rubbing within an hour or less of cooking. The most common effect I have seen from early rubbage is the occasional development of a "cured" flavor.

Just rub it before you put the pieces on the egg. Personally I normally don't rub chicken a head of time.

I knew you were serious Chris. Y'all have a lot of snow up here. We came North to CHantilly for my daughter's gymnastic meet tomorrow.

So I'll rub them out for an hour before thr cook.

It reminds me of the joke that the difference between erotic and kinky is that when you use a feather on her, it's erotic. When you use the whole chicken, it's kinky. :laugh:
