Cochinita and Contreau

Had planned on starting my Cochinita pibil friday night,but a call to go to work SATURDAY!! forced me to get up at 3:00 and start it before I left.This is our favorite way to do our pork and it is pretty easy to do.

Double blend the mainade,cinnimon,cloves,cumin,achiote seeds,Black peppercorns and 14 cloves of Garlic-mixed w/ Sour Orange juice.

I line the tray with the Banana leaves,I normally smoke it raised for 2 hours and then tray,but work was getting in the way.
