Cochinita and Contreau

Had planned on starting my Cochinita pibil friday night,but a call to go to work SATURDAY!! forced me to get up at 3:00 and start it before I left.This is our favorite way to do our pork and it is pretty easy to do.
The meat from Returant Depot is hard to beat
Double blend the mainade,cinnimon,cloves,cumin,achiote seeds,Black peppercorns and 14 cloves of Garlic-mixed w/ Sour Orange juice.
I line the tray with the Banana leaves,I normally smoke it raised for 2 hours and then tray,but work was getting in the way.
12 hours at 260
Pickled some red Onions
Had to start with a nice Marg
My wife made some spicy black beans-they go well with this dish
Tacos and tostadas O so tasty!

Very nice, Dale. Too bad work had to get in the way of that! Nice, nice dinner, including the cocktail.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Here you go Molly
I prefer who;e spices Molly and then I grind,you can adapt powdered.
2oz Achiote seeda(you can buy the paste in a box)
2tbsp Mexican Oregeno
1-1/2 tsp Cumin seeds
1/2 tsp whole cloves
1-1/2 tbsp peppercorns Black
1- 5-7 inch cinnamon stick
Grind all the dry spices well
In a blender add 1- 1/2 cups Sour Orange juice,12-15 cloves of Garlic and 1 tbsp kosher salt.
Molly blend it really well and then I let it sit for an hour and blend again.It is a fool proof recipe and gives the meat a great flavor.

Oh man that meal looks awesome. I really want to try Pibil but having never had it I don't know what it should taste like. I always try to know my food a bit before I cook it. I guess I have to head south to try it!!
