Hot tubbed a ribeye and sirloin this evening
Stabilized the mini at 440 dome - 90 second sear on both sides and roast to desired temp.
Ribeye comes off

Good looking meat....
But what is the gasket?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -

Like the idea with the T-pen, Frank. Could get expensive if you're cooking steaks for 12 though!
But still, after all that, your steak's still RAW! :laugh: :laugh:I hate it when I go to the kitchen for food and all I find are ingredients!
