Paella Night

Last night I had one of the best paellas ever at my friend's, again only had my iphone & wished I had taken more pics. Anyway, he included some delicious big shrimp,prawns, squid, pork ribs, chicken, asparagus, red peppers & peas.The rice was just right, moist having absorved all that combination of delicious flavours. Just before serving we added S & P and EVOO. For snacks there was Spanish Dry Cured Ham & again some aerated red wine goodness. A fantastic night shared with great friends which I want to share with you. We are egging some Tomahawk Ribeyes tonight.

That looks and sounds delisiouso! I'm sad to admit that I have never tasted paella. Maybe you can make some at the Monterey eggfest! :woohoo:

Okay Beli I spent the last half hour looking at Paella pans and I'm ready to buy. One question, do you leave the lid open when cooking paella on the egg? I ask this because I'm not sure what size pan to get. If I use the large and have to close the lid it seems that 13 1/2" is about as big as I can fit. They are about 17" with the handles. Also, do you have a good recipe?

Oh, another outstanding meal by the way.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -
