First cook on the new small egg

I got a large and a small egg for Christmas, after previously having a medium. The medium served it's purpose very well, I just wanted the versatility and capacity a large and a small would provide. Here you see the large and small sitting in there new homes with the medium looking a bit I would say "lonely".
<img src = "http://img.photobucket.com/albums/v485/CentralPork/samsung044.jpg">[p]The first cook on the small was pit beef as described in the cooks and recipe's section of Wessb's website (thanks Wess I love your site !!). Here you see a 4 pound portion of what was formerly a 12 pound prime sirloin tip roast all coated up with olive oil and Dizzy Pig Cowlick with a little additional salt and cracked pepper. The egg has been brought up to a temp of 400 degrees and the set up is direct. Notice how white the inside of the new egg is.

Here is the finished product resting patiently before it is thin sliced. It took 1 hour and 30 minutes, and I pulled at an internal temperature of 138 degrees. It's got a nice char crust on the outside, but moist and juicy in the center.[p]<img src = "http://img.photobucket.com/albums/v485/CentralPork/PitBeefcooked.jpg">[p]The roast was still too big to cut on my small slicer, so I just cut it in half and sliced half at a time. As you can see from this final picture, I didnt give it quite enough rest time. You can however see how tender and juicy this meat is. It was great on sammichs with either horesradish or bbq sauce.     CentralPork, welcome to the multiple club! I use my small about 50% of the time and love it!
    I just read your profile and see you are in Cape. Been there many a time as my wife's now deceased grandmother lived down the road in the tiny town of Oran and going to Cape was known as going to the city!!!

    I know Oran pretty well. Cape is still kinda the "cultural center", if there is such a thing in Southeast Missouri. Cape is home to the Southeast Missouri State Redhawks, formerly the "Indians". In todays climate the regents decided "Redhawks" would be more politically correct. Gonna take me awhile to get used to that.

    With weather the way it is here in SE Missouri a cover would certainly be nice. Bout the best I can do right now however is a patio umbrella....:) Hmmmmmmmm, maybe with the proceeds from sale of the medium...

    CentralPork,[p]Congrats on the Inaugural Cook!![p]You're correct...that Mediun does sort'a look like a stepchild setting there!![p]Make sure you show "Mr. Medium" you still have the love where he's concerned....otherwise, you'll wake up and find out he's gone and joined the Circus!![p]I grew up in SE MO...myself!![p]Potosi area....now there's your "Cultural Mecca"!![p]Chubby[p]PS...I second the "Nice Deck" comment!!

    Not that it has anything to do with you of course, but there was a state of the art maximum security prison built in Potosi a few years back... Thanks for the complement on the deck. I have actually found a good family who plans to "adopt" the medium. Who knows it might even keep showing up on forum pics.

    I am a big sports fan(with the egg i'm getting "bigger" everyday)and the thought of my former medium being at Arrowhead for tailgates is great. My hope is that you will continue to post forum pics with the medium and Ms mini side by side smoking away.....
