Christmas Brunch in Florida
Florida Grillin Girl
Posts: 4,965
Yesterdays Christmas brunch - I did Egret's ham, did not inject but used the glaze.
Note the toothpicks (RRP's idea), mine were colorful:
Saran wrap overnight:
On the egg on Christmas morning - first the ham, then the duck breast, then the salmon, all cooked at 235 degree dome temp with sugar maple and apple wood. Salmon almost ready here:
I cured 4 duck breasts in Hi Mountain cure for 3 days in the fridge:
Duck breast smoking away-
Some delicious Roquefort cheese I bought at Mazzaro's - it's on a cheese board shaped like WHAT?
Duck breast sliced:
A pic of the food table:
Eggs in a basket, I made 2 types, bacon and cheese, and smoked salmon with cheese and capers:
The teenagers digging in:
A plated picture missing the cranberry sauce and the home made apple sauce:
Merry Christmas from my family - that's my mom (the short one!):
My mom and the grandkids, they are getting big and some are interested in the egg! Yay!
No white Christmas here, just some fake snowflakes hanging from the chandelier:
Happy Holidays, my fellow egg people!

Great pictures Faith. And what a wonderful looking meal. So many great recipes to cook this time of year, I would still like to do a ham. Did you use puff pastry in your egg cups?

Teresa, they were wonton wrappers- 2 per cup. They usually brown up more than they did, but I think I had too much stuff in the oven with them. They were easy and good!Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Awesome! As usual! How did you like the duck and at what temp would you pull it?
-
Everything looks beautiful and yummy. I haven't seen Lenox Holly ware since I left joysie...

The duck was good, most everyone tried it and really liked it. It was pretty salty though I rinsed for 1 1/2 hours. I pulled it at 150- ish. I like it more rare, but I didnt want to freak everyone out.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Hey Faith, Just wanted to say thanks for the tip on the phone. I was able to slice the warm turkey breasts very easily.
You have a nice family. It's good you can all meet and have a wonderful time together.
We had a nice time and Cindy cooked a big breakfast. Cindys brother Doug came and later his son came. We spent the whole day together and talked...
Cindy has a laptop now connecting to the forum using a wireless router. We are both using it upstairs and the man cave is downstairs and that is where the desktop computer is. So now we can read the forum together. When we came across your post Cindy said what is the state above Missouri? I said it's Iowa but, I said "it's not Iowa" meaning the shape of your board wasn't in the shape of Iowa but, we confirmed it! Cindy was right! Do you have an Iowa shaped cutting board for cheese because of the cheese makers of Iowa? Tim & Cindy -
RRP, my friend is from New London and attended University of Iowa. The cheese board was a gift he got for Christmas.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Tim, it was nice talking to you on the phone. What is Cindy's handle? You should introduce her to us on the forum.
The cheese board was ordered from www.aheirloom.com - as a gift for a friend that's from Iowa. There was a writeup on them in December issue of Food Network Magazine. I thought it was a cool gift for someone that loves their home state.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
