Christmas Vittles

Cooked up a Standing Rib Roast,a 16 pound ham,a turkey breast and some peach bread pudding.I bought a whole 7 bone riib roast,cut off 4 bones to cook and got the remaining 3 bones in the fridge goin commando til Valentines Day.

    Looks like you had a fine Christmas meal! That peach bread pudding looks like one sweeeeet deeeesert...

    It was REALLY good.That pic is before it was cooked.I have a Rum sauce recipe that you cook on the stovetop to drizzle over it.YUM!I hope you and yours had a great Christmas.

    Thanks.We had a small gathering Xmas eve and fed a HORDE today at my SisIL's house.I am eggcited to try the dryaged beef. :)

    Peach Bread Pudding with Rum Sauce-
    1-12 oz French bread loaf cut into 1' pieces and toasted
    4-cups of whole milk
    4-eggs,beaten
    2-cups of sugar
    2-sticks of butter,cut into 1/4' pieces
    4-tablespoons vanilla extract
    1-tablespoon-almond extract(optional)
    2-28 oz cans of peaches in syrup drained and chopped

    Rum Sauce
    1 1/2-cups of sugar
    2-cups Heavy cream
    1/2- tablespoon vanilla extract
    1 1/2-tablespoons of butter
    5-teaspoons of cornstarch
    2/3 cup of water
    2/3 cup of good quality dark rum

    The Process
    1.Place toasted bread cubes into a larce mixing bowl.
    2.Add milk and allow bread to absorb for at least 10 minutes.
    3.In a seperate bowl,add eggs and whisk in sugar and extracts
    4.Add egg mixture to bread
    5.Add cubed butter and distribute throughout.
    6.Add the drained,chopped peaches and stir.
    7.Spray or butter a 12x14x2 pyrex baking dish and pour in mixture.
    8.Bake at 350F for 1-1 1/4 hours.

    For the sauce
    In a small sauce pan,combine sugar,cream,vanilla and butter.
    Bring to a simmer and stir until sugar is dissolved.
    Combine cornstarch and water in a seperate small bowl and whisk until cornstarch has dissolved.
    Add CS/W mixture to the simmering ingredients and allow to thicken.
    Boil for 1 minute.
    Remove from heat and stir in rum.
    Plate the peach bread pubbing and drizzle with hot rum sauce,serve immediately.
