I put a 8.5 lb butt on late last night to eat at 5 this evening .... looks like it will be done too early ..... about 6 hours before we eat.
Should I pull it after it rests? Also, what will be the best way to warm it back up this evening ?

If I was in your place I'd do the following:
Slow my cook down by 25-50 degrees
About 45 mins before you pull it, put two or three foil wrapped brick in your oven and bring to 300 degrees.
Put the bricks in the bottom of an ice chest, pull the butt and wrap in HDAF, wrap in a heavy towel, put butt on top of bricks, and put a towel over the top of the butt - you should get at least 3-4 hours over 140 degrees if you use a small ice chest.

Good advice from BBQM. I wouldn't let the butt cool at all for that dwell time, I'd find a way to keep it warm until you serve it.

Good answer from Kent.
By pulling, he was referring to pulling from the grill, then placing in the pre warmed cooler. Cover with towels (beach ones work great).
You will be surprised how hot it is when you take it out and pull it just before serving!

BTW, if you have a Guru, you can put it in the "Ramp" mode, setting your meat temp to say 205*, and it will lower your Egg temp to 200 or so and keep it from over cooking. -
I've held pork butts 6 hrs wrapped in foil, then newspaper in a cooler and temped at 157 when we got around to pulling and eating it. It was delish. Good luck and Merry Christmas.

Hey Kent, I understand we have a mutual friend in Lawton. He happens to be my boss. Been trying to get Jimmy hooked up with an egg, no luck so far, but he does enjoy my food I bring to work. Merry Christmas.

I use to cook to 195, but the last several ones I have cooked to 200-205 and they are eggcellent!
