I don't know if it was the wind last night or what but I woke up this morning after about 8 hours of cook time to a 350 degree pit and a brisket and a butt that are pretty much done. Problem is, we don't eat til 7pm. Suggestions on what to do with the meat until then? I've foiled/toweled/coolered for ~4hrs before, but not for 11.
Thanks Eggers!

I agree. You almost have to treat it like leftovers.
That should not be a problem with the butt. Were you planning to have pulled pork? If so that is not an issue with reheating.
With the brisket you might consider getting it out of the frig and hot tubbing it till it comes up to about 100+ degrees and then pour hot beef broth on it to serve.
Both will still be very flavorful.
