Buckboard Bacon ????

I have done buckbard bacon several time and have very good sucess. I use porl loins soak them for 10 days in a sealeed freezer bag then rinse and soak in water rinsing twice then dry in fridge over nite. Yesterday I did this and it took 3+ hours to get to 150. Today Iam doing the second one and it only has been on for 2 hours and it"s 150 already. Has any body had this happen or how long does it usually take everyone else?

Do you use Tender Quick or Hi Mtn. for your brine. Am going to try this soon need to find some Hi Mtn.

Yes, to answer your question, I have had some butts that smoke pretty fast and others that seem to take forever. Just the difference in pigs, I reckon :laugh:
FYI, I also use Hi-Mountain and have had great results -
Call me the odd ball, but I like the Morton sugar cure the best. I have 21 pounds of pork butt that I started curing 12 days ago soaking right now, and will smoke tomorrow

you can also buy the pink salts separately and make your own differently flavored cures. just a thought. the high mountain cures are great, but they are like instant cake mixes too. meaning, you can buy the ingredients separately and tune them to your tastes.ed egli avea del cul fatto trombetta -Dante
