Smoking some cheese

Ok, I wasn't going to do cheese this year but Hoss pushed me right on over the edge yesterday with his post. I picked up 10 blocks of pepper jack, and about 15 blocks of cheddar today at wally world. My plan is using the soldering iron and going about an hour on the smoke. Apple will be the choice of wood and I guess this year I will get to skip the ice tray, because its currently 22 degrees outside. I think I may leave my cheese on a cookie sheet outside for about an hour after smoking to air out and then into ziplocks to finish the mellowing in the fridge for a week. I figure at 22 degrees I don't have to worry about insects getting on it while it's resting. Anybody else have any great ideas or advice?
Update: I just finished up and ended up going an hour and fifteen minutes total time. I went almost two hours on the last batch and it was too smokey for my liking, so I trimmed it back this year. I had to stand a few sticks up to gain some more real estate, but I did get it all on there. Going into ziplocks now and into the fridge. I probably will foodsaver them in about four days.

Wow, small world! I'm doing the same thing tomorrow. I picked up my cheese today and did a clean-out burn on one of my larges. I could only find pecan chips, though. My butcher ran out of apple. I've smoked lots of cheese with the apple and love it. I've never smoked cheese with the pecan. I've done other cooks with it, however. Should I go ahead or wait until I find some apple? Oh yea, I use the bean can and soldering iron method, too. Love it!

Pecan will be fine.TRUST ME! :evil: Really pecan is my go to wood.It is probably the MOST versatile wood of all I've ever used!

Last year and the first batch of this year I used a fruit wood blend for my smoke but last trip to everything BBQ they had some chips made from the oak barrels used to age wine. I picked up a bag of merlot and a bag of cabernet. The last batch of cheese I did I used the cabernet and we just opened the first stick of swiss....AMAZING!!!

NO! I don't think you need to worry about bugs....Not sure about you folk, but we don't even get Snow Flees until Feb.
I won't need to worry about an ice tray either, with a low of -11 F. tonight and a high 15 forecast for tomorrow :woohoo: :woohoo: .
I'll be doing Sharp Cheddar, Colby, Swiss and Pepper Jack.
This week is busy, busy, busy with the Reif production of the Nutcracker, but next week I'm going to roast some nuts too! Going to try it with Little Steven's "Garam Masala Spice" ideas.

Not quiet that cold here. I am holding 39 degrees inside the dome with no ice tray. Not too bad.

I'll be doing mine with Apple...BUT...I agree that Pecan is a great "go to" wood (wish I didn't have to "try" to find it and buy it in a bag, but it dosen't grow here!
Another great "go to" is Wild (or Black) Cherry! That I have growing here and it too, is some wonderful smoke-wood! -

Here's the direction to smoke cheese with the soldering iron. The tray of ice is neccesary if the out side temps are not cold enough to keep the cheese from getting soft. As you can tell I had to use the tray the first time I did it because it was in the 70's outside. Last night it was in the teens here, so there was no need for the ice tray. Heres the link.

Pecan wood used to be impossible to find around here NOW weber sells chunks and chips of it (just like their hickory and apple) and most ACE and True Value Hardware stores carry them. I stocked up on an end of season sale. -
That sounds great. I'm new to the forum but have become addicted. It's the first thing I do at work after checking business e-mail. I'm in Montgomery and wanted to know when and where there are eggfests in this paart of the country. Thanks much.

Not really sure about local gatherings down your way. As far as real deal eggfest, their is one in Gulfport, MS every year I believe, a couple in Fl every year, and also the big one in October in Atlanta. There's always local dealers doing demo's that turn into eggfest sometimes.
