Mac & Cheese, chili, gumbo are some that can be prepared in advance and just reheated.

I made smoked egg salad and it was a hit. Take hard boiled eggs, smoke with soaked apple wood chips at 275' for 20 mins, and use your own egg salad recipe. They get light amber and take on a smokey taste. The texture is a little tough but I chopped it in the food processor and it was wonderful. All I used was Miracle Whip lite and celery. Instead of crackers I brushed pita with garlic oil and toasted lightly on the egg then cut in wedges.
