Pulled an all nighter for my youngests birthday lunch today...11lb whole brisket-
the dogs couldn't handle 3am!-
my birthday present from the kids-
Brisket at 175F...another hour or so and it will be ready for the cooler. Will try to get some sliced pics up soon-
Shoulda been up with Hoss and Jack...long night!

Once it is 180 or 185, start sticking a fork into it and twisting. Once the fork goes in and can be twisted with little resistance it is done regardless of the meat temp. If you go over that stage, the meat will begin to dry out.

How's that gasket thing going?

I would wait till that thing was closer to 200 to take off. I like to probe from about 195-205 and when the thermopen is in like butter I know it's done. Are you going to take the point off and make some burnt ends?

Gasket,I dont need no freegin gasket! :woohoo: Mines been gone fer a spell...Buster- pulled it at 185F in fattest part, wrapped in foil n a cooler-burnt ends are on the menu for tonite!

Chris, be sure and let us know how your brisket turns out. I am a sucker for any post with a dog in it. Your pooches look adorable. They must be awfully smart as well. :laugh: I bet you serve the brisket on that custom plate!
