Injected Butts

<p />These two butts ( 7 and 7½ lbs respectively) were injected, 10% weight ratio, with Dale's Sauce and apple juice, then rubbed down with Kosher salt, black pepper, garlic, chili powder and some thyme. They sat in a plastic bag over night in the refrigerator. They cooked indirect (firebricks and drip pan) at 250°** for 8½ hours to an internal of 197°. [p]** the 250° was the dome temperature. Temperature at the grid level, beside the firebricks was 300°. The butts sat approximately four inches above the grid on a rack sitting on the drip pan. I am convinced now that "injected" butts will cook quicker than "non" injected. Btw, the meat is out of this world, too bad it's going to a party today ;)
