So if the dome temp is usually 20-30 degrees hotter would it make sense to cook the bird breast down?

My question exactly. I'm going to cook mine legs up, in a dutch oven.

I doubt you will gain much advantage and it will make your bird less visually appealing. You can hang bags of ice water on the breasts for an hour or two before cooking which may help a little. I cut the legs/thighs from the breast/wings and cook as two pieces allowing me to pull them at their ideal temps. Even if the breast gets to 170 internal, it will still be moist and juicy.
