Temp issues - turkey

So I followed the mad max recipe to a T, but I am having issues with the egg temp....2 therm (BGE Brand and a digital probe are both saying I am at 275 or so....BUT I am continuing to have flair ups and the grill is extremely hot...Any suggestions?

Is your BGE temp probe in the dome sticking in the turkey when you close the lid?LBGE AR SMALL BGE WOO RING

and are the flair up when you are opening the egg?? you give it a blast of air then to fuel the fire

no, the temp probe is not touching the turkey....Flairups are happening when the dome is closed....

You are using a roasting pan? It is catching all the drippings? Sounds like fat dripping on the coals if you are truly at 275. You need to be at 325 but flairups should not occur at either temp unless flammables are drippng onto the coals.

Did you wait long enough for the charcoal to settle in before putting on the bird, so it is not the charcoal sparking?

Sounds like some of the drippings are not getting caught by the pan. Perhaps lift up the pan and put some foil or a cookie sheet under it??
Also- not sure how long your bird has been on, but the cold bird will bring the temp down in the egg. It will take a while to come back up. I wouldn't worry too much about 275- give it 45 minutes or so and see if it is not closer to 325.
...and don't sweat it- it will get cooked sooner or later! Even if the skin gets charred from some flare ups, it will peel right off and there will be a delicious bird under itWhich came first the chicken or the egg? I egged the chicken and then I ate his leg. -
Bird cooked much quicker than expected, but it is off and it looks great! I am excited to try it out..

I had 2 drip pans, and they were more than big enough...
