Rub Recipe

I got this recipe for a friend for a homemade rub. I have not made many homemade rubs. You guys/Gals that have, give me your thoughts about the recipe....

Have a great Thansgiving!

Recipe

2 cups Paprika
1/4 cup garlic
1/4 cup cayenne pepper
1/4 cup white pepper
10 tsp ground nutmeg
10 tsp ground cloves
1 1/2 cups black pepper
1/4 cup onion powder
1 cup chili powder
10 tbs salt
5 tbs Cavender's Greek


No brown or turbinado sugar???????

    Looks like it would be good on ribs. The nutmeg and cloves are different. You could add some turbindo if you want sweeter. I use Cavender's alot for different things, great on greek salads and lamb.

    No sugar is quite unusual. Maybe 1 in 40 rubs for pork have no sugar, but are accompanied by a sweet sauce. Usually, there would be a little more sugar than salt.

    About 1 out of 10 for beef have no sugar. I haven't looked at many poultry rubs, but a few of those also had no sugar.

    Also, for my taste, 1 tsp of cloves would be plenty.

    I wonder what is in Cavender's?

    Sauce recipe that came with the rub

    6 cups white vinegar
    2 pounds confectioners sugar
    Juice of 2 Lemons
    2 oz. black pepper
    2 oz. salt
    2 oz. onion powder
    level tsp garlic powder
    dash red pepper
    2 12 oz can tomato paste

    Sounds interesting. Has a decent amount of pepper! I like using white pepper along with black pepper, two different areas of heat. I really enjoy making rubs so I'd be curious to see what you think after you try it out!
