Would this work inside the roasting pan to raise the turkey as opposed to a V-rack? The corners of my V-rack won't allow the rack to fit down in the pan. Then the turkey is raised too high and the thermometer won't let the dome close.

You could remove the fire ring, located above the fire box, to gain 3 inches or so. If you fill the lump to the top of the firebox you will have plenty of fuel for the cook.

As long as the bird isn't sitting in the liquid it should work fine.

I don't think that cooling rack has more than 1/2" or so of clearance. The back and thighs of the bird would be in the liquids, maybe not early into the cook but certainly before the end.

That's right, they would have to bulb out the excess liquid or put some type of spacer under the legs of the rack.

Yep, thanks guys!! That's one thing that crossed my mind...
I'm thinking a new roasting pan is in my near future -
They are only $15 or less at Walmart and a lot of grocery stores, they also come with a stand off rack at that price.
I think this pan was $9.95 at a local grocery store. I didn't use the provided rack, rather I use the BGE V-Rack.
I foil the pan to make clean up easier.

that would work fine ....go look at the pics of my set up at mad max turkey central....my bird rests on a trivet looking thing....very similar....

as for the thermometer merely remove that spring on the inside, and then you can pull the thermometer out, close dome and reinsert thermometer. Pitch the spring in the trash - you don't need it gravity holds it in place.Re-gasketing America one yard at a time.

You can raise the thermometer probe by inserting half a wine cork on it.
