Gort, the neighborhood fisherman, caught some blues yesterday,, he is brining them now and wants me to smoke them for him..
i saw a hunk of sugar cane at the produce store this morning and thought of your posts, both sugar cane and fishing, so you're the likely target. .
figure low 200's for 90 minutes should do it.
is sugar cane a decent choice for bluefish?
and if so how much
thanks and the rib roast looked fantastic ..you do eat well

  • bill,

I have only used sugar cane with poultry but I think it would go well with the fish. It's a relatively light smoke nothing like hickory or mesquite. I wait to put the sugar cane on after the temps are stabilized and I don't wait for the smoke to clear after putting it on. If the cane is anywhere near the lit lump it will go fairly fast.

I cut the cane at the nodes, then split, and use 6-10 pieces. Good luck with it.
  • thanks ,,. will let you know
