Just tried the cold rise Zippy dough.used Caputo OO, mixed yesterday, then a 36 hour ferment in the fridge. Flavor great, and one of the easiest doughs to stretch. May have left it a little to slack. could pull to a windowpane if i wasn't careful. Next time i'll make it just a little stiffer. Defin1tely needs 650 to brown!
