Using Humphrey's Lump, oak and cherry.
Rubbed with Meadow Creek Black Pepper Brisket Rub.
This will be my first brisket on the Egg and my first low amd slow brisket.
Only ever did one brisket before - high heat then foil on WSM. It turned out ok.
Me and foiling anything just don't get along.
