At the Springfield Eggfest Cliff Timmons told me about Horrman meats in Pleasant Hope. They're regionally famous for their brats and Cliff said it was a great place to buy locally grown beef and pork. It's only about 8 or 9 miles from my house, so I went up there this afternoon to meet them, get some brats and a shoulder for some pulled pork this weekend. They will custom cut a half a locally grown, raised on dirt hog for me for about 1.25 a pound finished weight and they'll do each section exactly the way I want it done. Time to sit down with my Ruhlman book and figure out exactly what I want to do.
