Got me a flat iron steak and have a question

I will be trying my first flat iron steak this evening and plan on simple S&P with a litle garlic salt for seasoning. Plan to fire the small egg to around 700 and using my CI grid for a sear of a couple of minutes per side and then letting the egg cool to around 500 to finish cooking for a few more minutes per side until it reaches the desired doneness.
My question is, what internal temp should I shoot for to get a slightly "under" medium (very slight pink center) steak?
Thanks for any help you can offer or any other cooking method suggestions.

That's the way my wife likes it and I usually pull it around 135 and let it rest. That's a little too done for me but...
