pulled pork quesadillas

I'm going to make pulled pork quesadillas this weekend for appetizers for a party we're having. Wondering what kind of cheese would really set the pork off. Aside from jack.

I'm thinking the pork, flour tortillas, bbq sauce. So what kind of cheese(s) might be good? Anything else besides those things?

    I have done them with flour tortillas and some salsa and 4 blend cheese. I Spray the first tortilla and lay it on a metal hot plate, add the goodies and then place the other tortilla on top, spray w/pam the top and after 4-5 minutes when the bottom one has started to get crispy turn over and go another 4-5 minutes. A pizza cutter works very well to cut. 6-8 sections.

    I'm kind of looking for something with more of a kick to it than the typical jack or jack blend. Like a bleu cheese or brie or goat cheese? Have you ever tried any of those with pork?

    Get jalapeno cheese for a nice kick or shake some cayenne pepper for another level. Several choices.

    Our local Publix market has just started carrying Boar's Head Chipotle Gouda cheese which has a real nice kick to it. I'm liking it a lot better than pepper jack cheese at the moment.
