I was cooking for my Dad's Birthday this past weekend and he said he wanted ribs. I was going baby backs and then I saw these...

I like mine with a simple seasoning of kosher salt and black pepper

I put them on the egg with the platesetter. Got the temp steady about 300 with some pecan wood chunks for smoke. About 2 1/2 hours later I had this.
