My bright yellow Thermapen was in the mailbox this afternoon. Gonna be in some hot thighs tonight. :)

    Your thighs will love your thermapen. I took a spatchcock up high direct in the dome at 400 till 205 in the thighs :kiss: The chick had wonderful crispy skin and everything but the breast was super good. I usually take the dark meat in a spatchcock to 200 that way the breast is still juicy and somewhat tender. Good luck with your thighs. :P
