<p />Rubbed Olive Oil under the skin on that baby, sprinkled dizzy dust one side , smokin in the dark on the other. Cooked direct on raised grid at a pretty constant 350 degrees for an hour. Smoked with small amount of Apple chips. Turned out pretty well...

  • CentralPork,
Looks like you're pretty darn successful at both. Beautiful![p]Mike

  • CentralPork,[p]Husband would like to know what procedure you used to get olive oil under the skin.[p]I know it's done all the time with turkey and chickens.[p]Just loosen the skin?[p]Chris In Pearland, TX

  • Chris Marksberry,
You can easily separate the skin from the bird so that you can slide your hands and/or fingers under the skin to add most anything you want. Alton Brown makes a paste of lemon zest, peppercorns, garlic, salt and olive oil to spread under the skin in his episode, "A Bird In The Pan".[p]TNW

  • Lawn Ranger,
Thanks for the compliment. Got lots to learn but with help from people like yourself on this forum I will get there.
