I'm looking for something to put the wood chips in, so I can remove it after I'm done cooking. That way I can change chips after each cook out.

When using a cast iron pot, are they placed in with the lump before lighting, or tucked in as best you can afterward it gets going?

Before I got my egg, I cooked pork butts in my Alton Brown flower pot. Literally, a flower pot with an electric hot plate in the bottom. You place a steel (not aluminum) pie or cake pan directly on the heating element and fill with smoking wood. Don't see why you couldn't set a pie pan directly on the coals.
Me? I just throw the chunks right in the fire. They're mostly gone by the time the cook is done anyway. If not, I can usually still identify them so I can pull them out before the next cook.I hate it when I go to the kitchen for food and all I find are ingredients!
