My First Boston Butt -- From March

Hi,

I meant to post this a long time ago, but I guess I did not. Anyway, here it is. I made it Elder Ward Style, but I had to make a few tweaks. I used honey instead of sugar, which I think caused the very black bark. I also used 1 1/2 cups of honey to make the slaw instead of sugar. That is because my girlfriend is on a special diet.

The pork tasted great. We will make it again this summer.

    Were you able to eat the bark or was it to crispy? I have never started my egg like that but I guess it worked fine. I simply dump my lump and light in a few places and let it stabilize. ;)

    The bark looks a lot worse than it was. It actually was very good. It had a subtle crunch to it in some areas. It came out great. The chimney starter works well, but you need to get used to it. For low and slow you fill about tho thirds and light, then dump when hot, and then put more fresh on top. For a lava like high heat, you probably should dump two in, but i only use one. The biggest drawback is the holes can get plugged sometimes.

    I am cooking some Pearls right now. I made my first ribs yesterday. I need to post those soon.

    Looks grate from here! No matter what they say, I still love crispy-crunchy beef, pork, or whatever, once in a while! I'm glad it was good! 8 - )
