Hi,
I meant to post this a long time ago, but I guess I did not. Anyway, here it is. I made it Elder Ward Style, but I had to make a few tweaks. I used honey instead of sugar, which I think caused the very black bark. I also used 1 1/2 cups of honey to make the slaw instead of sugar. That is because my girlfriend is on a special diet.
The pork tasted great. We will make it again this summer.
Ready to make the rub...
Rub ready...
Eggcessories ready with The Stoker
Getting the chimney started ready to take out
Lump leftover from first two cooks
Wicked Good Charcoal!
The last time it will be this white...
Fire after dumping the chimney in and adding some lump on top
The main event...
Fire is stable, smoke is going, and Stoker is working
Almost done...
Ready to pull
Slaw after resting 24 hours
Pulled and read
Plated with homemade sauce that turned out better than we hoped.
Lesson learned...use a drip pan

Were you able to eat the bark or was it to crispy? I have never started my egg like that but I guess it worked fine. I simply dump my lump and light in a few places and let it stabilize.
What are you egging this weekend? Tim -
The bark looks a lot worse than it was. It actually was very good. It had a subtle crunch to it in some areas. It came out great. The chimney starter works well, but you need to get used to it. For low and slow you fill about tho thirds and light, then dump when hot, and then put more fresh on top. For a lava like high heat, you probably should dump two in, but i only use one. The biggest drawback is the holes can get plugged sometimes.
I am cooking some Pearls right now. I made my first ribs yesterday. I need to post those soon. -
Looks grate from here! No matter what they say, I still love crispy-crunchy beef, pork, or whatever, once in a while! I'm glad it was good! 8 - )
